Butter Chicken

MUST HAVE:
1 brown onion, finely diced
2 cloves garlic, finely chopped
2cm piece ginger, finely chopped
500g chicken or tofu, cut into 3cm cubes
1 green zucchini, chopped
Handful green beans, trimmed & chopped
200ml coconut milk

NICE TO HAVE:
1 cup baby spinach
1 cup White/Brown rice to serve.
YUMMY EXTRA BITS (adds that flair):
Coriander
Fresh Lime
Method:
Heat 1 tablespoon oil in a pot/pan on medium heat. Add onion, garlic and ginger. Cook, stirring, for 2-3 minutes. Add diced protein and cook, stirring occasionally, for 3-4 minutes or until cooked.
Add Simply Wholesome Pantry Butter Chicken Recipe Base and stir through for 1 minute. Add vegetables, stir through for 2 minutes. Add coconut milk and combine. Place lid on and simmer for 5-7 minutes.
Stir through spinach and serve on rice. Top with fresh coriander and a squeeze of lime. Delish!
