Butter Chicken

Serves: 4

MUST HAVE:

  • 1 brown onion, finely diced

  • 2 cloves garlic, finely chopped

  • 2cm piece ginger, finely chopped

  • 500g chicken or tofu, cut into 3cm cubes

  • 1 green zucchini, chopped

  • Handful green beans, trimmed & chopped

  • 200ml coconut milk

  • Simply Wholesome Pantry Butter Chicken Recipe Base

NICE TO HAVE:

  • 1 cup baby spinach

  • 1 cup White/Brown rice to serve.

YUMMY EXTRA BITS (adds that flair):

  • Coriander

  • Fresh Lime

Method:

  1. Heat 1 tablespoon oil in a pot/pan on medium heat. Add onion, garlic and ginger. Cook, stirring, for 2-3 minutes. Add diced protein and cook, stirring occasionally, for 3-4 minutes or until cooked.

  2. Add Simply Wholesome Pantry Butter Chicken Recipe Base and stir through for 1 minute. Add vegetables, stir through for 2 minutes. Add coconut milk and combine. Place lid on and simmer for 5-7 minutes.

  3. Stir through spinach and serve on rice. Top with fresh coriander and a squeeze of lime. Delish!
