Mexican Slow Cooked Pulled Pork Rolls

Prep time: 20 minutes 

Cook time: 8 hours

Serves: 6 - 8

Ingredients:

  • 1.5kg pork shoulder

  • 1 teaspoon sea salt flakes 

  • 1 teaspoon cracked black pepper 

  • 1 tablespoon ground cumin 

  • 1 tablespoon sweet paprika 

  • 1 tablespoon extra virgin olive oil 

  • 2 brown onions, finely sliced

  • 3 cloves garlic, finely chopped

  • Simply Wholesome Pantry Mexican One Pot Recipe Base 

  • 1/2 cup apple cider vinegar  

  • 1 cup chicken stock

  • 1 cup adobo chillies in the sauce

  • 2 tablespoons brown sugar 

To serve:

  • Crusty rolls 

  • Mayonnaise 

  • Store bought or homemade coleslaw 

Method:

  1. Mix together the olive oil, paprika, cumin, pepper, sea salt to make a paste. Rub this all over the pork shoulder. 

  2. Into the slow cooker, add the onion, garlic, Simply Wholesome Pantry Mexican One Pot Recipe Base, apple cider vinegar, chicken stock, adobo chillies and brown sugar. Stir everything together. Add the pork shoulder on top of the liquid.  

  3. Cook on high for 7-8 hours, until the pork meat is shredding easily with a fork. Remove the pork (you can leave the slow cooker on high if the liquid needs to reduce a little bit). Shred the meat and add it back to the slow cooker, stir everything together. 

  4. Serve the pulled pork into rolls with lots of mayo and fresh slaw. Feel free to stir through the mayo with the slaw before adding to the roll.
