Spiced Lamb Cutlets with Chilli Mint Salsa

Serves: 4

Ingredients:

  • Simply Wholesome Pantry Butter Chicken Recipe Base

  • 8-12 lamb cutlets or lamb chops 

Salsa:

  • 1 red onion, very finely diced 

  • 2 tomatoes, very finely diced 

  • 2 lebanese cucumbers, very finely diced 

  • 400g canned chickpeas, rinsed and drained 

  • 1/2 cup mint, very finely chopped 

  • 1/2 lemon, juice squeezed 

  • 3 tablespoons Greek yoghurt 

  • 1/2 cup mint leaves, finely chopped 

  • 1/2 lemon, juice squeezed 

  • Sea salt & cracked black pepper 

To serve:

  • Flat bread or steamed rice 

Method:

  1. In a bowl, mix the Simply Wholesome Pantry Butter Chicken Recipe Base and the lamb. Coat each lamb cutlet evenly with the paste and set aside to marinate while preparing the salsa.

  2. For the salsa: In a large mixing bowl, combine the red onion, tomatoes, Lebanese cucumbers, chickpeas, and chopped mint. Squeeze the juice of half a lemon over the salsa and mix well. Add a good pinch of sea salt. Set aside.

  3. For the yoghurt sauce: In a separate bowl, mix together Greek yoghurt, mint, lemon juice, sea salt, and cracked black pepper. Set aside.

  4. Heat a frying pan or bbq over medium-high heat. Grill the marinated lamb cutlets for about 2-3 minutes on each side or until cooked to your liking.

  5. To serve: Warm the flatbread or serve steamed rice on a plate. Place the grilled lamb cutlets on top. Spoon generous amounts of the Chilli Mint Salsa over the lamb. Drizzle the Yoghurt Sauce on top.
