Thai Green Curry

MUST HAVE:
1 brown onion, finely sliced
2 cloves garlic, finely chopped
2cm piece ginger, finely chopped
500g chicken, pork, beef or tofu
1 large zucchini, sliced
Handful of snow peas, washed and trimmed
200ml coconut milk

NICE TO HAVE:
1 bunch bok choy
1 cup White/Brown rice to serve.
YUMMY EXTRA BITS (adds that flair):
Lime
Thai basil
Method:
Heat 1 tablespoon oil in a pot/pan on medium heat. Add onion, garlic and ginger. Cook, stirring, for 2-3 minutes. Add diced protein and cook, stirring occasionally, for 3-4 minutes.
Add Simply Wholesome Pantry Thai Green Curry Recipe Base and stir through for 1 minute. Add zucchini and snow peas, stir through for 2 minutes. Add coconut milk and combine. Place lid on and simmer for 5-7 minutes. Stir through bok choy for 2 minutes. Turn off heat and squeeze over lime juice.
Serve on rice. Top with some Thai basil and voila!
