Thai Green Curry

Cook time: 35 mins

Serves: 4

MUST HAVE:

  • 1 brown onion, finely sliced

  • 2 cloves garlic, finely chopped

  • 2cm piece ginger, finely chopped

  • 500g chicken, pork, beef or tofu

  • 1 large zucchini, sliced

  • Handful of snow peas, washed and trimmed

  • 200ml coconut milk

  • Simply Wholesome Pantry Thai Green Curry Recipe Base

NICE TO HAVE:

  • 1 bunch bok choy

  • 1 cup White/Brown rice to serve.

YUMMY EXTRA BITS (adds that flair):

  • Lime

  • Thai basil

Method:

  1. Heat 1 tablespoon oil in a pot/pan on medium heat. Add onion, garlic and ginger. Cook, stirring, for 2-3 minutes. Add diced protein and cook, stirring occasionally, for 3-4 minutes.

  2. Add Simply Wholesome Pantry Thai Green Curry Recipe Base and stir through for 1 minute. Add zucchini and snow peas, stir through for 2 minutes. Add coconut milk and combine. Place lid on and simmer for 5-7 minutes. Stir through bok choy for 2 minutes. Turn off heat and squeeze over lime juice.

  3. Serve on rice. Top with some Thai basil and voila!
