One Pan Quinoa, Chicken & Ginger San Choi Bow 

Prep time: 15 minutes 

Cook time: 20 minutes

Serves: 4

Ingredients:

  • 1 cup Simply Wholesome Pantry Quinoa & Lentils 

  • 2 tablespoons extra virgin olive oil 

  • 500g chicken mince

  • 2cm piece ginger, very finely chopped 

  • 2 cloves garlic, very finely chopped 

  • 375 g water chestnuts, drained and chopped

  • 1 cup broccoli or broccolini, finely chopped 

  • 1 medium red capsicum, finely diced 

  • 2 cups bean sprouts, rinsed and drained 

  • 1/2 cup soy sauce 

  • 1/4 cup pure maple syrup 

  • 12 iceberg lettuce cups

  • 5 sprigs coriander and some capsicum strips as garnish

  • 1 large red chilli (optional)

Method:

  1. Cook the Simply Wholesome Pantry Quinoa & Lentils in a pot according to package instructions. Set aside once done and run through some cold water. Set aside. 

  2. In a large frying pan or wok, heat the olive oil over medium-high heat. Add the chicken mince and cook, breaking it up 5 mins. Then add the ginger, and garlic, and cook until for 3-4 mins. 

  3. Add the broccoli, and red capsicum to the pan. Stir-fry for 5-7 minutes, then add the water chestnuts, cooked quinoa & lentils, soy sauce, and maple syrup, stirring until well combined and heated through. Turn off the heat and stir through the bean shoots. 

  4. Spoon the mixture into lettuce cups and garnish with coriander, carrot and capsicum strips, shallots, and optional red chilli. Enjoy!
