Teriyaki Salmon with Noodles

Cook time: 35 mins

Serves: 4

MUST HAVE:

  • 500g salmon, chicken, pork or tofu, cut into 3cm cubes

  • 1 small head broccoli, florets chopped

  • 1 cup snow peas, trimmed & sliced down the middle

  • 1/2 cup frozen edamame, thawed

  • 2 cloves garlic, finely chopped

  • 2cm piece ginger, finely chopped

  • Simply Wholesome Pantry Teriyaki Recipe Base

NICE TO HAVE:

  • 180g udon noodles

YUMMY EXTRA BITS (adds that flair):

  • 3 spring onion, finely sliced

  • 2 tablespoons sesame seeds

Method:

  1. Season protein with salt & pepper. Heat 1 tablespoon oil in a large frying pan on medium/high. Add the protein and cook on each side until just cooked through. Remove and set aside.

  2. Add remaining oil to the frying pan. Add broccoli and stir-fry, for 2-3 mins. Add the snow peas, garlic and ginger and stir-fry for 2 mins. Add the edamame and the Simply Wholesome Pantry Teriyaki Recipe Base. Stir through for 2-3 minutes.

  3. Add cooked udon noodles to the pan and toss through. Serve into bowls, top with protein, sesame seeds and spring onion. Yummo!
