Sweet Chilli Prawns with Asian Greens & Rice

Serves: 4

Ingredients:

Marinade:

  • 20 raw large tiger prawns, peeled with or without tail

  • 1 tablespoon sweet chilli sauce

  • Simply Wholesome Pantry Asian Stir-fry Recipe Base (broken into 2 steps below)  

  • 2 cloves garlic, finely chopped

  • 1 tablespoon coriander roots, chopped

  • 2 cups snow peas, trimmed and sliced lengthways

  • 3 bunches bok choy, washed and roughly chopped

  • 5 spring onion, sliced

  • 2 tablespoons sweet chilli sauce

  • White or brown rice

To serve: Fresh lime wedges, coriander leaves, fried shallots (optional)

Method:

  1. Start by cooking 3/4 cup rice according to packet instructions, approx. 10 minutes, as the remaining cooking only takes 10 minutes. 

  2. Place the prawns in a bowl. Add the sweet chilli sauce, 1/3 of the Simply Wholesome Pantry Asian Stir-fry Recipe Base, garlic, and coriander roots. Stir through to marinate.

  3. Place a medium fry pan on medium/high heat. Add the prawns, separate them so they have room and cook for approx. 3 minutes each side. Remove and set aside.

  4. In the same pan, increase the heat to high and add the snow peas, add 1 tablespoon of sweet chilli sauce and stir fry for 2 minutes. Then add the bok choy, spring onion, remaining sweet chilli and the remaining Simply Wholesome Pantry Asian Stir-fry Recipe Base. Stir fry for 2 mins. Turn the heat off.

  5. To serve: add the rice to bowls, then the stir fried greens and top with the sweet chilli prawns. Squeeze over some fresh lime juice. Top with some coriander leaves and fried shallots (optional).
