Crispy Black Bean Burritos

Prep time: 20 minutes 

Cook time: 30 minutes 

Serves 4

Ingredients:

Black bean filling:

  • 1 tablespoon olive oil

  • 1 small brown onion, finely diced 

  • 3 garlic cloves, very finely chopped 

  • 2 teaspoons sweet paprika 

  • 2 teaspoons ground cumin 

  • 2 x 400g canned black beans, drained and rinsed 

  • 1 Simply Wholesome Pantry Mexican One Pot Recipe Base 

  • 1/4 cup water 

  • Salt & pepper 

Tomato Salsa:

  • 2 tomatoes, very finely diced 

  • 1 small red onion, very finely diced 

  • 1/4 bunch coriander, very finely chopped 

  • 1/2 small lime, juiced 

  • Pinch sea salt flakes 

Guacamole:

  • 2 avocados

  • 1/2 small lime, juiced 

  • 1-2 tablespoons coriander, very finely chopped 

  • Pinch of sea salt flakes 

To assemble:

  • 4 large flour tortillas

  • 1.5 cups shredded cheese (tasty, Monterey Jack)  

Method

  1. Prepare Black Bean Filling: Heat olive oil in a pan and sauté onion and garlic until soft. Add sweet paprika, ground cumin and stir through. Add black beans, Simply Wholesome Pantry Mexican One Pot Recipe Base, and 1/4 cup water. Stir until well combined. Season with salt and pepper. Cook until the mixture thickens, approx. 15-20 minutes.

  2. For the tomato salsa: combine tomatoes, red onion, coriander, lime juice, and a pinch of sea salt. Mix well.

  3. For the guacamole: mash avocados, add lime juice, coriander, and a pinch of sea salt. Mix until smooth.

  4. To assemble: take a tortilla, place a scoop of black bean filling on each. Add a layer of shredded cheese, tomato salsa, and a dollop of guacamole. Fold the sides and roll into burritos.

  5. Crisp Up: heat a pan and crisp up the burritos on each side until golden and the cheese melts.
