Teriyaki Beef Bowls with Rice

Prep time: 20 minutes 

Cook time: 15 minutes 

Serves: 4 

Ingredients:

  • 1 tablespoon peanut or olive oil 

  • 500g beef mince 

  • 2cm piece of ginger, finely chopped or grated 

  • 2 cloves garlic, finely chopped 

  • 1/2 Simply Wholesome Pantry Teriyaki Recipe Base

  • 1 tablespoon sweet chilli sauce 

  • 1 teaspoon cornflour 

  • 1-2 tablespoons water 

To serve:

  • Steamed rice (1.5 cups for 4 people)

  • 1 cup frozen edamame beans, thawed 

  • 1 cup red cabbage, very finely shredded 

  • 2 spring onion, finely sliced 

  • 2 tablespoons fried shallots or sesame seeds 

  • 2 tablespoons japanese mayonnaise 

  • 1 -2 teaspoons sweet chilli sauce 

Method:

  1. Heat peanut or olive oil in a large frying pan on medium-high heat. Add the ginger and garlic and cook, stirring for 1-2 minutes until softened.

  2. Add the beef mince and cook, breaking up the beef with a wooden spoon, for 3-4 minutes until the beef begins to brown. 

  3. Add Simply Wholesome Pantry Teriyaki Recipe Base and sweet chilli sauce and cook, stirring for a further 1-2 minutes until the sauce has thickened slightly. Mix the corn flour and water and add it to the pan, then cook for a further 1-2 minutes until the sauce is thick and glossy. 

  4. Into four bowls, divide the steamed rice, edamame beans and shredded cabbage across four bowls. Add the teriyaki beef. Sprinkle over the sesame seeds or fried shallots and sliced spring onions. Mix the japanese mayo and sweet chilli sauce together and dollop on top. 

Tip: to use up the rest of your Simply Wholesome Pantry Teriyaki Recipe Base, you could either double your amount of protein and use this mix for salads, stir-frys or tacos.
