Vegetarian Teriyaki Stir-Fry

Serves: 4
Ingredients:
1-2 tablespoons vegetable or olive oil
2 cups green beans, trimmed and chopped into thirds
2 capsicums, diced
1 red onion, thickly sliced
1 cup baby corn
2 cups mushrooms, sliced
2/3 cup roasted cashews, roughly chopped
1 cup white or brown rice
Marinade:
Simply Wholesome Pantry Teriyaki Recipe Base
1 tablespoon brown sugar
2cm piece ginger, finely chopped
2 garlic cloves, finely chopped
1 teaspoon cornflour
Method:
For the marinade: mix together all ingredients and set aside.
Heat 1 tablespoon oil in a large wok or stainless steel pan over high heat. Add green beans, capsicums, red onion, baby corn and mushrooms. Cook for 6 minutes.
Once the vegetables have cooked, add the sauce, stir and gently cook for a further 2 minutes. Then stir through the cashews.
Serve the stir-fry on a bed of rice.
