Vegetarian Teriyaki Stir-Fry

Prep time: 20 minutes 

Cook time: 15 minutes 

Serves: 4

Ingredients:

  • 1-2 tablespoons vegetable or olive oil

  • 2 cups green beans, trimmed and chopped into thirds

  • 2 capsicums, diced 

  • 1 red onion, thickly sliced 

  • 1 cup baby corn 

  • 2 cups mushrooms, sliced 

  • 2/3 cup roasted cashews, roughly chopped 

  • 1 cup white or brown rice 

Marinade:

  • Simply Wholesome Pantry Teriyaki Recipe Base

  • 1 tablespoon brown sugar  

  • 2cm piece ginger, finely chopped 

  • 2 garlic cloves, finely chopped 

  • 1 teaspoon cornflour

Method:

  1. For the marinade: mix together all ingredients and set aside. 

  2. Heat 1 tablespoon oil in a large wok or stainless steel pan over high heat. Add green beans, capsicums, red onion, baby corn and mushrooms. Cook for 6 minutes.

  3. Once the vegetables have cooked, add the sauce, stir and gently cook for a further 2 minutes. Then stir through the cashews. 

  4. Serve the stir-fry on a bed of rice.
