Sesame Ginger Tofu & Vegetable Stir-fry

Prep time: 20 minutes 

Cook time: 15 minutes 

Serves: 4

Ingredients:

  • 1 tablespoons oil (eg. Olive, vegetable, canola)

  • 350g-400g firm tofu, cut into 3cm cubes

  • 1 tablespoon cornflour 

  • 1/2 teaspoons salt 

  • 2 bunches choy sum, trimmed, washed well and cut in half widthways 

  • 2 cups snow peas, washed and trimmed 

Sauce:

  • Simply Wholesome Pantry Asian Stir-fry Recipe Base   

  • 2 tablespoons pure maple syrup 

  • 1 tablespoon rice wine vinegar 

  • 12cm piece ginger, finely chopped 

To serve

  • Your choice of noodles (eg. Soba, rice noodles, egg or udon noodles)

  • 1 tablespoons sesame seeds 

  • Sriracha sauce (optional)

Method:

  1. For the sauce: In a small bowl, mix the Simply Wholesome Pantry Asian Stir-fry Recipe Base with maple syrup, rice wine vinegar, and finely chopped ginger.

  2. In a bowl, coat tofu cubes with cornflour and a pinch of salt. Heat 1 tablespoon of oil in a wok or large pan over medium-high heat. Add tofu cubes and cook until golden brown on all sides. Remove tofu from the pan and set aside.

  3. In the same pan, add choy sum and snow peas. Stir-fry for 1-2 minutes until vegetables are slightly tender but still vibrant. Return the cooked tofu to the pan with vegetables. Pour the sauce over the tofu and vegetables. Toss everything together over high heat for 60 seconds until well-coated and heated through.

  4. Place the sesame ginger tofu and vegetables over the cooked noodles. Sprinkle sesame seeds on top. Squeeze over some sriracha sauce to serve.
