Family Beef Nachos

Prep time: 20 minutes 

Cook time: 30 minutes 

Serves: 4

Ingredients

  • 1 tablespoon extra virgin olive oil

  • 1 large brown onion, finely diced 

  • 2 cloves garlic, finely chopped 

  • 500g beef mince – any grade is fine 

  • 1 tablespoon sweet paprika (optional)

  • 1 tablespoon ground cumin (optional)

  • Simply Wholesome Pantry Mexican One Pot Recipe Base 

  • 1 teaspoon salt 

  • 400g crushed tinned tomatoes 

  • 400g kidney or black beans, drained and rinsed 

To serve:

  • 250g corn chips 

  • 1 cup grated tasty, mozzarella or cheddar cheese 

  • 3 tomatoes, diced 

  • 1 large avocado, diced 

  • 150g sour cream 

  • Fresh coriander (optional)   

  • Fresh lime (optional)

Method:

  1. Heat olive oil in a large frying pan over medium heat. Add the onion and garlic and cook, stirring, for 2-3 minutes until translucent and fragrant. Add the beef mince and cook, using a wooden spoon to break up the mince, for 5-6 minutes until browned. Add the spices, Simply Wholesome Pantry Mexican One Pot Recipe Base and salt. Stir through the mince until well combined. 

  2. Add the tinned tomatoes and beans, simmer on low for 5-10 minutes.  

  3. Preheat the oven grill to 200 degrees Celsius. 

  4. Scatter the corn chips into a large, shallow roasting dish (or use the same frying pan if it’s oven safe, you’ll just need to take out the mince first). Add the cooked beef mince on top of the corn chips. Scatter over the grated cheese. Place under the hot grill for approx. 8-10 minutes (depending on how efficient your grill is) or until the cheese has melted. 

  5. Top the nachos with diced tomato, avocado, sour cream and coriander. Squeeze over some fresh lime juice and serve.
