Mexican One Pot

Cook time: 35 mins

Serves 4

MUST HAVE:

  • 500g beef, pork or chicken mince

  • 1 brown onion, finely diced

  • 2 cloves garlic, finely chopped

  • 1 red capsicum, diced

  • 400g canned corn, drained

  • 1.5 cups jasmine rice, rinsed

  • 3 cups chicken/beef stock

  • Simply Wholesome Pantry Mexican One Pot Recipe Base

NICE TO HAVE:

  • 1 avocado, diced

  • 1 cup grated cheese

  • 1 tomato, diced

YUMMY EXTRA BITS (adds that flair):

  • Sour Cream

  • Cos/iceberg lettuce, shredded

  • Coriander

  • Lime

Method:

  1. Add 1 tbsp oil to pan. Cook onion and garlic for 2-3 minutes. Add mince and cook, breaking it up, for 5 mins. Add red capsicum and cook for 2 minutes.

  2. Add Simply Wholesome Pantry Mexican One Pot Recipe Base, rice and stock. Stir through and let simmer for 15 minutes until rice is cooked.

Serve multiple ways:

Serve beef in a Mexican bowl or with tacos/burritos with optional fillings including: shredded lettuce, diced tomato, diced red onion, coriander, grated cheese, sour cream, avocado, jalapeno.
