Mediterranean One Pot

Cook time: 35 mins

Serves: 4

MUST HAVE:

  • 4 small chicken breasts, approx.. 600g

  • 1 brown onion, finely diced

  • 2 cloves garlic, finely chopped

  • 1 large zucchini, chopped into half moons

  • 1 large tomato, diced

  • 1 cup risoni

  • 2.5 cups chicken stock

  • Simply Wholesome Pantry Mediterranean Recipe Base

NICE TO HAVE:

  • 2 cups baby spinach

  • 100g feta cheese, crumbled

YUMMY EXTRA BITS (adds that flair):

  • Parsley or Basil

Method:

  • Season chicken with salt & pepper. Heat 1 tablespoon oil in a large pot/pan on medium heat. Cook chicken breasts each side until just cooked through. Remove and set aside.

  • Add 1 tbsp oil to pan. Cook onion and garlic for 2-3 minutes. Add zucchini & tomato and cook for 2 minutes.

  • Add Simply Wholesome Pantry Mediterranean Recipe Base, risoni and chicken stock. Stir through and let simmer for 10 minutes until pasta is cooked. Stir through spinach. Crumble over feta & garnish with herb of choice. Ripper dish!
