Thai Green Pork Curry

Prep time: 10 minutes 

Cook time: 30 minutes 

Serves: 4 

Ingredients:

  • Simply Wholesome Pantry Thai Green Curry Recipe Base

  • 400g pork fillet, cut into thin slices 

  • 400ml coconut milk 

  • 2 eggplants, cut into 2cm cubes 

  • 1 tablespoon fish sauce 

  • 1 tablespoon brown sugar or palm sugar 

  • 6 makrut leaves

  • 1 cup thai basil leaves 

  • 1 large red chilli, thinly sliced (optional) 

  • White or brown rice (to serve)

Method:

  1. In large saucepan, add Simply Wholesome Pantry Thai Green Curry Recipe Base and simmer 1 minute on medium heat. Add sliced pork and stir fry 4 minutes.

  2. Add coconut milk, eggplant, fish sauce, sugar, salt and lime leaves. Use your hands to squeeze the lime leaves to release flavour before adding them to the pot. 

  3. Simmer for 15-20 minutes, stirring occasionally. Taste and adjust seasoning with more fish sauce or sugar. Turn of the heat.

  4. Serve over rice and garnish with Thai basil .
