Teriyaki Sesame Chicken with Broccolini and Rice

Serves: 4
Ingredients:
1/2 cup chicken stock
2 tablespoon sesame seeds
5 spring onion, finely sliced
2 limes, cut into quarters
2 bunches broccolini
1 cup white or brown rice
Sea salt and cracked black pepper
Marinade:
Simply Wholesome Pantry Teriyaki Recipe Base
1 tablespoon brown sugar
2cm piece ginger, finely chopped
2 garlic cloves, finely chopped
4 chicken thighs, approx. 600g total
Method:
For the marinade: mix all ingredients together. Reserve half the marinade and add the chicken pieces to the remaining marinade and mix well.
For the rice: place a medium saucepan onto high heat. Add 2.25 cups water and the rice. Bring to the boil and then turn down to a very gentle simmer. Place the lid on and cook for 12-14 minutes. Turn off the heat. Let it stand for 3-4 minutes. Fluff with a fork.
Place the spare marinade into a saucepan with the chicken stock. Bring to the boil and then turn down to a gentle simmer for 10 minutes. Stir occasionally until it thickens slightly.
Place a large frying pan onto medium/high heat. Add the chicken and make sure to spread them out, so they don’t stew. After approx. 2 minutes, add a little water (about 1/4 cup) into the pan to stop it from burning if necessary. Continue cooking chicken for approx. 4 minutes each side until cooked through.
Meanwhile, place the broccolini in a microwave safe bowl, cover with water. Cook in the microwave on high for 5 minutes (while the chicken and rice is cooking). Remove and drain the broccolini. Alternatively blanch the broccolini in boiling water for 3 minutes. Remove.
To serve: add the rice to the bowl, then add the teriyaki chicken on top. Add the broccolini, top with some sesame seeds and sliced spring onion. Drizzle over some teriyaki sauce and squeeze over some fresh lime juice. Season with salt & pepper.
