Sticky Ginger Chicken with Greens

Prep time: 15 minutes 

Cook time: 20 minutes 

Serves: 4

Ingredients

  • Simply Wholesome Pantry Asian Stir-fry Recipe Base  

  • 2cm piece ginger, finely chopped 

  • ¼ cup honey 

  • 1 large juicy lime, juice squeezed 

  • 8-10 chicken drumsticks 

  • 3 bunches bok choy 

  • 2 bunches broccolini 

  • 1/2 cup roasted peanuts, roughly chopped 

  • Fresh red chilli slices (optional)

Serve on a bed of white/brown rice, quinoa or zucchini noodles

Method:

  1. Preheat oven to 220 degrees. Line a large baking/roasting tray with baking paper. 

  2. Mix together the Simply Wholesome Pantry Asian Stir-fry Recipe Base, ginger, honey and lime juice. Pour 3/4 of the sauce over the chicken drumsticks and rub sauce into the chicken. Lay the chicken out on the roasting tray and roast for a total of 20 minutes, turning the drumsticks half way and pouring over the remaining sauce. 

  3. Meanwhile, steam the broccolini for 3 minutes and the bok choy for 2 minutes. Remove and set aside. 

  4. Divide the rice or grain into four bowls. Top with the steamed greens and then the chicken drumsticks. Sprinkle over the chopped peanuts and squeeze over some fresh lime juice. Top with chilli to your desire.
