Pork Stir Fry with Green Beans & Edamame

Prep time: 15 minutes 

Cook time: 20 minutes 

Serves: 4

Ingredients:

  • 1-2 tablespoons olive oil or peanut oil 

  • 400g pork mince 

  • 1 small brown onion, finely chopped 

  • 2 cloves garlic, finely chopped 

  • 2cm piece ginger, finely chopped or grated 

  • 300g green beans, washed, trimmed and chopped into thirds 

  • 1 cup frozen edamame beans, thawed   

  • Simply Wholesome Pantry Asian Stir-fry Recipe Base  

  • 1 teaspoon honey 

  • 3 spring onions, sliced

  • White or brown rice for serving

Method:

  1. Place a large frying pan or wok onto high heat. Add 1 tablespoon of oil and let it heat. Add the green beans and spread them out along the base of the pan. Leave for 1 minute to colour. Give them a stir and then leave them for another 30-60 seconds. Add the edamame for the last 10 seconds and stir through. Remove and place on a plate. 

  2. In the same pan, turn the heat down to medium and add some more oil. Add the onion, cook for 1 minute, stirring. Add the ginger and garlic and cook, stirring, for 2-3 minutes. 

  3. Turn the heat back up to high and add the pork mince. Use a wooden spoon to break up the mince and cook for 3-4 minutes until browned. Add the Simply Wholesome Pantry Asian Stir-fry Recipe Base and the honey and stir through on high heat for 30-60 seconds. Add the beans and edamame beans back to the pan and stir through for 1-2 minutes. Turn off the heat. 

  4. Serve on rice and garnish with sliced spring onion.
