One Pot Thai Green Noodles

Cook time: 15 minutes

Serves: 4 

Ingredients:

  • Simply Wholesome Pantry Thai Green Curry Recipe Base 

  • 400g coconut milk (full fat) 

  • 3 tablespoons fish sauce 

  • 3 tablespoons soy sauce 

  • 2 teaspoons chicken or veggie stock powder 

  • 2 carrots, julienned or peeled into ribbons 

  • Small head broccoli, chopped into small florets 

  • 1 red capsicum, cut into strips 

  • 1/2 cup frozen edamame beans

  • 450g raw prawns, peeled, deveined 

  • 3 spring onion, finely sliced 

  • 1 cup coriander leaves, roughly chopped 

  • 4 nests of instant dried egg noodles   

  • Fresh lime to serve

Method:

  1. To a large saucepan – add the Simply Wholesome Pantry Thai Green Curry Recipe Base, coconut milk, fish sauce, soy sauce, stock powder and 2 cups water. Bring to the boil. 

  2. Turn the heat down to a gentle simmer, add the noodles and push them down under the liquids. Then add the carrot, broccoli, capsicum, edamame beans, raw prawns and spring onion. Place the lid on and cook for 5-6 minutes or until everything is cooked (the prawns will turn from silver to orange).

  3. Top with fresh coriander and squeeze over some fresh lime juice.
