One Pan Creamy Garlic Chicken

Prep time: 10 minutes 

Cook time: 25 minutes 

Serves: 4

Ingredients:

  • Pinch sea salt

  • 1 teaspoon cracked black pepper

  • 2 teaspoon garlic powder

  • 2 tablespoons extra virgin olive oil

  • 4 small chicken fillets, approx. 700g total (see note)

  • 2 tablespoons extra virgin olive oil (split)

  • 2 tablespoons butter (split)

  • 2 shallots, finely sliced

  • 3 cloves garlic, finely chopped

  • 1 tablespoon plain flour

  • Simply Wholesome Pantry Creamy One Pot Recipe Base  

  • 1 cup chicken stock

  • 2 cups spinach

  • 1 cup fresh parmesan, grated

  • 1/3 cup parsley, finely chopped

Method:

  1. In a large bowl, mix together the chicken fillets with garlic powder, salt, pepper and olive oil.

  2. Preheat a large frying pan onto very high heat, let it heat for 1 minute. Add 1 tablespoon of olive oil and butter and heat for 30 seconds. Add chicken fillets and cook each side for approx 5-6 minutes. If the chicken starts to burn on the outside, turn the heat down to low. Remove chicken and place on a plate. You can also add a splash of water to stop the bottom of the pan from charring/burning. 

  3. Place the same pan back onto medium/high heat. Add 1 tablespoon of olive oil and butter. Add shallots and cook, stirring for 2 minutes. Add the garlic and cook, stirring, for 3 minutes. Then add plain flour and stir through for 2-3 minutes to allow the flour to cook. Add the Simply Wholesome Pantry Creamy One Pot Recipe Base and stock and whisk continuously for 5 minutes or until slightly thickened and creamy. Add the spinach and fresh parmesan and stir through.

  4. Place the chicken fillets back into the pan, push them down so most of the fillet is submerged in the sauce. Turn the heat down to low and cook for approx. 5 minutes (or until chicken is completely cooked through). Add some extra parmesan and chopped parsley. Season well.

Note: if you can only get large chicken breasts, use two of them and slice them down the middle.
