One Pan Creamy Beef Pappardelle

Serves: 4 

Ingredients:

  • 2 tablespoons extra virgin olive oil 

  • 1 large brown onion, sliced 

  • 2 cloves garlic, finely chopped 

  • 1 carrot, grated 

  • 2 celery sticks, finely chopped 

  • 2 cups button mushrooms, sliced 

  • 1 tablespoon tomato paste 

  • 2 teaspoons sweet paprika 

  • 500g beef mince 

  • 2 tablespoons flour 

  • Simply Wholesome Pantry Creamy One Pot Recipe Base  

  • 4 cups beef stock (1 litre)

  • 1 tablespoon Worcestershire sauce 

  • 250g dried pappardelle pasta 

  • 3/4 cup sour cream 

  • 2 cups grated mozzarella cheese 

Method:

  1. Heat extra virgin olive oil in a large, deep pan over medium heat. Add onions and cook until softened and golden. Add garlic, carrot and celery. Cook for an additional 3-4 minutes until vegetables are tender. Add mushrooms to the pan and cook until they release their moisture and become golden brown. Push the vegetables to the side of the pan and add tomato paste and sweet paprika. Cook for 1-2 minutes until fragrant. Add beef mince to the pan, breaking it apart with a spoon. Cook until browned.

  2. Sprinkle flour over the meat and vegetables, stirring well to combine and cook for 2 minutes to eliminate the raw flour taste. Pour in the Simply Wholesome Pantry Creamy One Pot Recipe Base and stir through. Then add beef stock, and Worcestershire sauce. Stir to combine all ingredients.

  3. Bring the mixture to a simmer and add the dried pappardelle pasta, ensuring it is submerged in the liquid. Cook for 12-15 minutes or until the pasta is al dente and the sauce has thickened. Reduce the heat to low, stir in sour cream until well combined, and adjust seasoning to taste.

  4. Preheat the grill to 200 degrees. Sprinkle grated mozzarella cheese over the top of the dish and place under the grill for approx. 10 minutes or until cheese is bubbling. Serve while hot.
