Ginger Teriyaki Stir-fry

Prep time: 10 minutes 

Cook time: 15 minutes  

Serves: 4

Ingredients:

  • 300g stir-fry beef strips

  • 4 cups desired mixed vegetables (eg. broccoli florets, sliced capsicum, thinly sliced carrot)

  • Sea salt and cracked black pepper

  • 2-3 tablespoons oil (eg. Olive oil, vegetable oil, canola oil, peanut oil)

  • 3 spring onion, finely sliced (optional for garnish)

Sauce:

  • Simply Wholesome Pantry Teriyaki Recipe Base

  • 2-3cm ginger, grated or very finely chopped 

  • 2 tablespoons soy sauce 

  • 1 tablespoon brown sugar 

  • 2 teaspoons cornflour 

Brown or white rice to serve. 

Method:

  1. For the sauce: Place the Simply Wholesome Pantry Teriyaki Recipe Base, ginger, soy sauce, brown sugar and cornflour into a bowl. Stir until sugar is dissolved and set aside. 

  2. For the stir fry: Heat 1 teaspoon vegetable oil in a large pan over medium-high heat. Add the vegetables and season with salt and pepper to taste. Cook for 3-4 minutes or until vegetables have started to brown and soften. Add 1 tablespoon of the stir-fry sauce and mix through quickly. Remove the vegetables and set aside. 

  3. Turn the heat to high. Add 1-2 tablespoons oil to the pan and let it heat. Add the beef strips to the pan and spread them out, you may have to do this in batches, so it doesn’t stew. Season with salt and pepper. Don’t move them for 1 minute, then flip them for another 1 minute. Add 1-2 tablespoons of sauce and mix through the beef. 

  4. Add all of the meat and vegetables back to the pan, keep the heat high. Pour in the remaining sauce and toss through for 1-2 minutes. Turn off the heat. Add the spring onion and stir through. Serve stir-fry on rice.
