Express Fish and Broccoli Green Curry

Serves: 4 

Ingredients

  • 1 tablespoon vegetable oil 

  • Simply Wholesome Pantry Thai Green Curry Recipe Base

  • 400ml canned coconut milk

  • 2 cups broccoli florets

  • 2 cups snow peas 

  • 400g white fish fillets, cut into 2cm pieces (eg. Barramundi, rockling, etc)

  • 2 makrut lime leaves 

  • 1 tablespoon brown sugar 

  • 1 tablespoon fish sauce 

  • 1 cup coriander, roughly chopped 

  • 1 cup Thai basil leaves 

  • Fresh lime for serving 

  • Cooked brown or white rice to serve 

Method:

  1. Heat a large frying pan with a tablespoon of vegetable oil. Add the Simply Wholesome Pantry Thai Green Curry Recipe Base to the pan and stir for 2-3 minutes. Pour in the coconut milk and combine with the paste. Let it start to gently bubble.  

  2. Add your fish of choice, the broccoli and snow peas and turn the heat down to a simmer. Cook for 6-8 minutes or until fish has just cooked through. Scrunch the makrut lime leaves to release flavour and add them into the curry. Stir in the brown sugar and fish sauce. Turn the heat off. Add some of the coriander and Thai basil. 

  3. Serve on a bed of rice and add some more fresh herbs to the top.
